How do I [26M] address my girlfriend's [26F] weight gain?

Long story short. My girlfriend and I have been dating for 7 years. She's gained 85 pounds (150-235) since we've met. The past 2 years I've tried to address the weight gain in a "nice" way. I've encouraged her to go to the gym with me (I go 3-4x a week). I've made healthier meals and try to discourage snack eating. Regardless, she never works out and I know she eats junk food when I'm gone. I've lost attraction to her now and it's sometimes hard for me to even look at her. I tried bringing it up from a health angle and she gets very reactive and says that I need to learn about body acceptance and that I'm belittling her. I don't know how to proceed and I'm thinking of just enacting the nuclear option - leaving her and starting over. The catch is that the first several years of our relationship were magical. They were the happiest years of my life. She was perfect for me and I was perfect for her. Any advice?

For reference, she's 5'6" and 235 pounds. I'm 6'3" and 215 pounds.

TL;DR: Out of ideas on how to deal with severe weight gain in a relationship. Thinking leaving is the only option.
