Fiancé (29F) of 7 months is going out for a one-on-one dinner with her previous boss (M). Previously stated it wasn't OK if i (28M) would do this. Is she being disrespectful?

Throwaway as my fiancé knows my reddit.

My fiancé and I are long distance and we were having our usual talk last night. Right before she goes she tells me that she'll be seeing her previous boss for dinner tonight. I didn't really think much of it until this morning when I woke up and got reminded on a conversation we had.
About 3 months ago I was going out for lunch with my classmate (F22) to work on an assignment. I told her about the situation and asked her if she was okay with it, she said yes but it would be a problem if we'd be going out for dinner in a one-on-one setting which she's pretty much doing right now.
So I started thinking about the conversation and it made me feel uncomfortable. I also know nothing about this person either.

I really don't wanna come across as a controlling/needy asshole but I do find this to be counterproductive with her values.

TL;DR: Fiancé goes on a one-on-one dinner with her previous boss, mentioned several months ago that it wouldn't be okay if i did something similar, started making me uncomfortable and have no idea how to tackle this.
